The Traditional -Modern 24th year Anniversary 
Gift is a Musical Instrument
(Heck No!!! ...I have  a houseful of Guitars!!!)

                                                We have enjoyed a great day together!
Started off the day with going to church , 
after church  my husband made us breakfast ,
(I made the bacon ...lol prior recipe post )
then we went on a bike ride to the park,
 came home & went swimming,
 then we enjoyed a wonderful dinner at Salt Rock Grill!



                                                       We arrived at Salt Rock Grill
                                                   my husband made the reservations ....
         We picked a cozy table by the window so we had a great  inter-coastal view.

                                 I am  celebrating with enjoying a glass of Red Sangria....




                                                  We started off with some appetizers ....
                                                                   Seared Scallops 
                       Bacon wrapped sea scallops sauteed in a citrus butter cream sauce.
                              (I cheated a lil on my no Gluten/Dairy/Soy -free diet )

                                                              Mussels Provencale 
 In a white wine, garlic, basil, saffron broth 
with plum tomato, basil and lemon zest.
                                                           For our main course ....
I had the Seared tuna steak  in a teriyaki glaze 
served with Fire Roasted Vegetables.
 My husband of course had the Ribeye Steak 
 Bone in. 1 1/4 Lb with Fire Roasted Vegetables.
                                                         Everything was so Yummy !
                      
I really enjoyed our evening!
                                                    My husband made it special !!!!
                                           Thanks Babe for 24 years of Marriage !!!!

Maple and Brown Sugar Turkey Bacon

 


      These delicious glazed bacon strips will be a hit at your breakfast table.

Ingredients:

                                                   I use Oscar Mayer Turkey Bacon
                                                                            &
                                                       Really good Maple syrup!

                                                                

  • 10-20 pieces of  turkey bacon                                                      
  • 4 tablespoons brown sugar
  • 2 tablespoons maple syrup
(Divide half quantity of brown sugar & syrup if you make a half batch)

Preparation:

 

Heat oven to 350°.
                              (I'm making half Maple brown sugar glazed  & half plain)

Line a baking pan with foil. Place 1 large cooling rack on the foil .
Place the bacon over the rack, laying them down in a row, overlapping slightly if necessary.
Drizzle the maple syrup over the bacon and use a pastry brush to make sure all the bacon is covered with the maple syrup.
Sprinkle brown sugar on top making sure every piece of bacon is covered with sweetness!!!

Bake for about 35 minutes, or until nicely browned slightly crisp.

Gluten/Dairy- free Corn Dog Muffins

                                                               Corn Dog Muffins
                                                            (Gluten-Dairy-free)
Ingredients:(makes 18 muffins)
1/3 cup melted butter spread(Earth Balance soy/dairy free)
 1-pkg  of Bob's Red Mill Cornbread Mix(gluten-free)
2 eggs
1 1/2 cup almond milk
2-3 turkey hot dogs, cut into 1″ bites
2-3 tablespoon of Honey
Non-stick spray (Coconut oil)

Directions: 

*Have all ingredients at room temperature
* You can also use a mini muffin tin to make smaller muffins just  cut the hotdogs into 1/2 ″ bites which should at least make about 2-3 dozen mini corn dog muffins. Shorten the baking time to 15 minutes and baste muffins with honey butter spread at the last 5 minutes of baking.



  1. Preheat oven to 375 degrees.
  2. Melt the butter spread

  3. In a bowl combine cornbread mix ,almond milk ,
     melted butter spread, & honey.
                                                                  I use local honey!
     I first add the honey to the warm butter spread so all is incorporated.

     
  4. Add eggs and whisk all ingredients to combine.
  5.  Cut the hot dog  into 1″ bites.
  6. Spray a muffin tin with non-stick spray.
  7.  Add about 2 Tablespoon of batter into each muffin cup.




  8. Place one hot dog bite into the middle of each cup.

  9. Top each muffin with remaining batter to cover hot dog.

  10.  Bake for a total of 20 minutes (oven temperatures vary).
  11.  After the first 10 minutes of baking , remove muffins from the oven and brush the honey butter spread mixture on top of each muffin.

  12. Bake for another 10 minutes or until cornbread is golden brown. 
  13. Place a toothpick into the muffin  to check if the batter comes out dry then you know the muffins are completely baked through.
                                                             These muffins are done !
  14. Cool  muffins for 5 minutes before serving. 
  15.  Serve with any condiment of choice for me it is mainly ketchup & Gulden's  mustard.



 Store leftovers in the refrigerator, and re-heat for 20-30 seconds before serving. 
You can also store in the freezer just thaw the corn dog muffins out then re-heat.

      These lil corn dog bites would be great
                         for any picnic or serve as an appetizer for a party.                        
                                             Football season is just around the corner .
