Ingredients
I’m
using 3 cups of the mixed 3 beans that I cooked earlier
for my 3 bean & ham soup recipe
however you can use the
following :
Goya is a good brand.
1 can
(15 ounce size) black beans, drained and rinsed
1 can (15 ounce size) great Northern beans, drained and rinsed
1 can (15 ounce size) red beans, drained and rinsed
1 can (15 ounce size) great Northern beans, drained and rinsed
1 can (15 ounce size) red beans, drained and rinsed
4 strips of roasted red peppers(in a jar)
1 clove garlic
1/2 cup diced red onion
3 tablespoons jarred sliced jalapeno-chopped
1/4 teaspoon chili powder
1/4 teaspoon cumin
3 tablespoons lime juice(1 juicy lime)
salt and pepper, to taste
Optional: 1/4 cup fresh cilantro, minced
Directions
Place all the ingredients in a food processor,
and blend until smooth.
I did not add the cilantro.
Drizzle in the olive oil until the dip comes to a
smooth texture.
Chill in the
refrigerator for an hour to let the flavors absorb.
Serve with tortilla chips, a
crutitae of veggies, or pita chips.
