Gluten Free Leprechaun Hats
I got this cute St Patty recipe idea off of PopSugar Girls' Guide

made a Gluten free Version !
My hats are not as Cute but they were a hit !!!
I used Gluten free Goodie Girl Mint Slims cookies
in place of Girlscout thin mints .

Ingredients
For the frosting:
You can use any homemade or store bought brand Vanilla frosting
and add green food coloring .
(Just make sure it is gluten free)
I made a non-dairy version frosting !
- 2 cups Power Sugar
- 1/2 cup Nutiva non-dairy butter spread
- 1 tbsp Pure Vanilla Extract
- Green food coloring
- 1 tbsp Almond or cashew milk(to thin out the frosting)
For the Hats:
- 1-2 bags of Goodie Girl Mint Slims cookies
- 1 bag of Gluten free marshmallows
- 1 bag gluten free Chocolate chips (Guittard)
- St patty Sprinkles ( I used the green 4 leaf clover)
Directions
Make the frosting:
In a mixer, beat together Non-dairy butterspread, powder sugar, almond milk, vanilla, until light and fluffy. Add Green food coloring
Assemble the Leprechaun Hats:
Place the Goodie Girl Mint Slims cookies on a sheet pan
lined with parchment paper.
Place a some Green frosting on top of each cookie .
Melt the chocolate chips over a double boiler or in the microwave.
Place a marshmallow on a skewer and dip into the melted chocolate
completely covering entire marshmallow.
Tap off any excess chocolate and place the chocolate covered marshmallow
on top of the green frosting cookie.
I place a green Shamrock sprinkle in the center
of the marshmallow hat.
Place in the refrigerator for chocolate to set up.
