I've have been sick for the past 2 weeks and my wonderful husband made me his chicken noodle soup.
Rick's Homemade Chicken Noodle Soup
Ingredients:
- 6 cups organic chicken broth
- 1 stalk celery, thinly sliced
- 1/2 white onion,diced
- 1 carrot, diced
- 2 chicken breast, bone in
- 8 oz. fine egg noodles
- Salt & pepper to taste
- 1/4 teaspoon of olive oil
- 1tablespoon parsley
- 1 bayleaf
Directions:
- In a soup pot over medium-low heat, Add celery, onion, and carrots(finely chopped) to 1/4 tsp of olive oil , stirring occasionally, about 5 minutes. Season chicken breast with salt & pepper then place both breasts in the pot and add 1 cup of chicken broth. Bring to a boil. Reduce heat to a simmer and cook, undisturbed, until vegetables are tender, and chicken is fully cooked, about 30 minutes
- Meanwhile, bring a large pot of salted water to a boil. Cook noodles until tender to the bite. Drain and set aside.
- Remove chicken breast , let cool, remove skin & bones then cut chicken into bite size pieces.
- Add chicken back to the pot and remaining chicken broth, bay leaf & parsley and cook until heated through, about 10-15 minutes on low simmer.
- Add cooked noodles and simmer until heated through, about 3-5 minute
- Add salt & pepper to taste.
- Serve hot with saltine crackers, biscuits or crusty bread.
