Chocolate Avocado Pudding

Chocolate Avocado Pudding
My new favorite treat !!!
Ingredients
Recipe makes 4 servings

½ cup semi-sweet chocolate chips( Gluten free Guittard )
2 large avocados - Ripe & pitted
2 tablespoon raw cocao powder
¼ teaspoon vanilla bean paste (substitute pure vanilla extract)
1 tablespoon pure vanilla extract
½ cup brown sugar
¼ teaspoon ground cinnamon
⅓ cup unsweetened almond milk



Instructions
 Cut & pit the avocados then scoop out the flesh placing into a blender or food processor . 
I’m using my Vitamix blender.  Melt the chocolate chips in a double boiler or microwave.
 Place the melted chocolate, cocoa powder, vanilla bean paste, cinnamon, and almond milk . 
Blend until smooth and creamy, scraping the sides of the blender if needed. 
Spoon into individual glasses or one big glass container and refrigerate for at least an hour
 ( this recipe can be prepared 1 day in advance).
Enjoy !!! 

You can garnish with fresh strawberries or raspberries.
Top with whipped cream or coolwhip (or non-dairy cocowhip)
