Something I 'm currently experiencing "Menopause" thought I share some good info, I have several of Suzanne Somers books related to Bio-Identical Hormones ... To my gal pals & family over 40 you should do the research & start feeling better. I am currently taking Bio-identical hormones  and  I feel that  I'm on that road to start feeling like myself again, its a journey ,however, "There is a light at the end of the tunnel "

One of my favorite Thanksgiving Memory - Ricky the Pilgrim

Over the River

(Thanksgiving Day)

Over the river and through the wood
To Grandmother's house we go.
The horse knows the way
To carry the sleigh
Through white and drifted snow.

Over the river and through the wood
Oh, how the wind does blow!
It stings the toes
And bites the nose,
As over the ground we go.

To have a first-rate play.
Hear the bells ring,
Ting-a-ling-ling!

Rick's Chicken Noodle Soup






I've have been sick for the past 2 weeks and my wonderful husband made me his chicken noodle soup.

                                                               I feel better already !


Rick's Homemade Chicken Noodle Soup


Ingredients:

  • 6 cups  organic chicken broth
  • 1 stalk celery, thinly sliced
  • 1/2  white onion,diced
  • 1 carrot, diced
  • 2 chicken breast, bone in
  • 8 oz. fine egg noodles
  • Salt & pepper to taste
  • 1/4 teaspoon of olive oil 
  • 1tablespoon parsley
  • 1 bayleaf

Directions:

  1. In a soup pot over medium-low heat,  Add celery, onion, and carrots(finely chopped) to 1/4 tsp of olive oil , stirring occasionally,  about 5 minutes. Season chicken breast with salt & pepper then place both breasts in the pot  and add 1 cup of chicken  broth. Bring to a boil. Reduce heat to a simmer and cook, undisturbed, until vegetables are tender, and chicken is fully cooked, about 30 minutes  

  1. Meanwhile, bring a large pot of salted water to a boil. Cook noodles until tender to the bite. Drain and set aside. 
  2. Remove chicken breast , let cool, remove skin & bones then cut chicken into bite size pieces.
  3. Add chicken back  to the pot  and remaining chicken broth, bay leaf & parsley  and cook until heated through, about 10-15 minutes on low simmer. 


  1. Add cooked noodles and simmer until heated through, about 3-5 minute


  1. Add salt & pepper to taste.
  2. Serve hot with saltine crackers, biscuits or crusty bread.
Makes 6-8 ample servings of Homemade Chicken Noodle Soup.

Cinnamon Apple Breakfast Bowl



         Cinnamon Apple Breakfast Bowl

Ingredients

  • 1/2 cup fat-free Greek Yogurt
  • 1 no-calorie sweetener packet(Truvia)
  • Drizzle of Honey 
  • 1/2 teaspoon ground cinnamon (I used Apple Dumpling spice )
  • 1 Fuji or Gala apple, cored and cubed(I used a Gala apple)
  • Chopped Walnuts
  • 1/4 teaspoon Vanilla extract

Directions

Dice 1 apple into cubes and place into a bowl then  sprinkle with Dutch Apple spice and 1 Truvia package.
Place in microwave for 20 -30 seconds until apples are hot.
Place the  Greek yogurt  in a separate bowl and  add more  sweetener, vanilla extract, and 1/4 teaspoon Apple spice or cinnamon . Mix well.
Top apple cubes with the Greek yogurt mixture and then drizzle with honey and add chopped walnuts.

 Enjoy!

Whats for dinner tonight- Crispy Curried Coconut Shrimp

 

                         Crispy Curried Coconut Shrimp

                               (With Red Curry Sauce)

 

Ingredients

  • 1 cup shredded, sweetened coconut flakes
  • 1/2 cup panko bread crumbs
  • 2 tablespoons curry powder
  • 1 1/2 teaspoons kosher salt
  • 2 egg whites
  • 1 pound shrimp, peeled and deveined
  • Lime wedges, for garnish

Directions

Preheat oven to 375 degrees F.
In a food processor, pulse the coconut until coarsely ground and transfer to a shallow bowl. Mix coconut with bread crumbs, curry powder, and salt, and set aside. Beat egg whites until slightly foamy. Dip shrimp in egg whites and coat with coconut mixture. Repeat to form a double coating. Place shrimp on rack placed within a sheet pan and bake for 10 minutes. Garnish with lime wedges and serve.

Red Curry Sauce:

  • 2 tablespoons vegetable oil
  • 2 tablespoons Thai red curry paste
  • 1 cup unsweetened coconut milk
  • 1 lime, juiced
Place a small pot over medium heat and coat with the oil. Stir the red curry paste into the pan and fry until aromatic. Slowly pour in the coconut milk and continue to stir to incorporate. Add the lime juice (and 1 of the squeezed out halves for added flavor) and cook for 5 to 10 minutes to thicken. Pour the sauce into a nice serving bowl and serve with the coconut shrimp.
