I made some lil pies for my sweetie !
Mini Apple & Blueberry Pies
Apple & Blueberry Filling
- 2 cup of tart apples, (I used 3 Gala apple) peeled, cored and cut into 1/4 inch dices small enough to fit into each cupcake opening)
- 1/4 cup brown sugar
- 1/4 cup of sugar
- 1/2 apple pie spice
- 1/2 cup Dutch apple preserves(I like House of Webster brand)
- 1 teaspoon fresh lemon juice
- 3-4 tablespoon of butter
- Flour for dusting
- Store bought pie crust -1 pie crust for this recipe
- 1 cup of blueberries
- 1/2 teaspoons cornstarch
- 1/2 cup Blueberry preserves(I like House of Webster brand)
*Note : You will have extra filling. Great for pancakes, ice cream topping or yogurt.
Directions :
Peel & core & dice the apples.
Cut 1 lemon .
Squeeze about 2 slices of lemon
on the apples so they don't turn brown .
I put the diced apples and the lemon peels in a bowl .
Continue dicing the apples .
Adding water to the bowl
to let the apples soak
in the lemon water bath.
Dice the remaining apples.
Add 3 tbsp of butter
to a large pan or a Dutch oven,
On Medium -High heat .
Stir together the dutch apples preserves
with the butter
until all melts together & well combined.
Rinse & dry the apples
Add the apple pie spice to the butter mixture.
Stirring
At this point you may want to lower the heat temp.
Put some flour in a bowl
Add apple pie spice to the flour.
Add 1/4 cup of light brown sugar
to the pan & stir.
Add another tbsp of butter.
Stir.
Back to the flour.
Add dice apples .
Coat the apples in the
flour mixture .
Then add the apples to the pan .
Stir altogether
on low heat.
Cover and let the apples cook until tender.
Dust your board with flour.
Roll out the pie crust.
Sprinkle pie crust with
apple pie spice.
Roll out the pie crust.
With a round cookie cutter
Cut out circles.
Apples are looking yummy!
Spray muffin tin with non-stick cooking spray.
Place the circles in the muffin tin.
Pressing down the dough in the center & up the sides.
This recipe makes 12 mini pies.
Squeeze remaining lemon into apple mixture & stir.
Now for the blueberries.....
Wash the blueberries.
Add blueberries to a sauce pot
Along with the blueberry preserves.
Add a squeeze of lemon juice.
(1-2 wedges)
Stir.
Add sugar
Stir & cook on low heat.
The blueberries will start to pop when they are done.
Crispy Crumb Topping
- 1 cup of Dry oats.
- 1/4 cup brown sugar
- 3-4 tbsp of butter
- 1/4 cup of flour
- 1/2 tspn of cinnamon
Add 1 cup of oats to a mixing bowl.
Add flour.
Add butter -cut up in dices.
Add cinnamon.
& set aside.
in a separate bowl Add 1/2 teaspoon of corn starch
and mix with 2 tbsp of water
and mix to well combined .
Add to the blueberries to thicken.
Cook on low heat until the blueberries sauce is thick .
Back to crumb topping Add 1/4 cup
of light brown sugar and mix together.
Now we can start to fill
the mini pie crust .
I filled half the tray with the apple filling
& the other half with the blueberry filling .
These are going to be so yummy!
All filled !
Add crisp crumb topping
to the mini pies .
Add a dab of butter.
on top of each mini pie.
Bake at 350 degrees F
On a foil lined cookie sheet pan.
(Blueberries can get messy!)
In they go.......
Bake until crust is lightly golden brown
and apple & blueberry mixture is bubbling.
(About 20-30 minutes)
Some of the Blueberry mixture
will most likely spill out .
Once cooled use a pairing knife and cut around the muffin tin
of each mini pie for easy access of removing from muffin tin.
I use a spoon to lift out the mini pies..
12 yummy pie treats ....
I don't have to feel guilty eating this lil guy !
I heat the mini pie in the microwave
For about a minute.
Add a scoop of vanilla ice cream & cool whip for me !
My husband's bowl........couple of mini pies .....
Double scoop of Vanilla ice cream......
& lots of whipped topping !
I think my husband enjoyed his sweetie pie treat !
