My husband really likes lemon flavored desserts
so the Queen of Hearts made him some tarts ....
The Queen of Hearts she made some tarts all on a summer's day;
The Knave of Hearts he stole the tarts and took them clean away.
The King of Hearts called for the tarts and beat the Knave full sore

Mini Lemon Tarts
Semi-Homemade
Ingredients
- One Lemon
- 5oz Cream cheese (softened)
- 1 jar of Macays Lemon Curd
- Store bought Pie crust
- 1 tbsp of Sugar
- 1-2 tbsp lemon zest
- Flour (for dusting)
- Can of whipped Cream(Topping)
Kitchen Essentials
- Mini muffin tin
- Mixer
- Round Cookie cutter
- Rolling pin
Instructions
Dust your board & rolling pin with flour .
Preheat oven to 400 degrees F.
Spray a 24-cup mini muffin tin with cooking spray well
so the crusts will not stick to the pan.
Roll the Dough out.
Using a 2''' round cookie cutter,
(I coat the cutter in flour so dough doesn't stick.)

Cut circles.
Tuck the dough into muffin cups , pressing with your fingertips
so that the dough comes up the sides of the cup.
This recipe makes 19 mini tarts with 1 pie crust.
Cut about a 2 ''' square of foil & press them into the insides of the dough cups.
Use pie weights , beans or rice or even Quarters like I did to weigh down the foil.
Press down into the foil.
Bake the crust
For about 10 minutes .
*Note: Do Not over bake they need to go back in the oven for a 2nd time with filling!
Then take them out of the oven and let cool and remove the foil weights.
Ready to fill.

Mackays Lemon curd great filling for cakes & tarts.
Zest one lemon & add to mixing bowl.
Squeeze 1 whole lemon -makes about 2 tbsp of lemon juice.
Add Sugar -about a tbsp.
My husband likes it sweet!
Stir together .
So the sugar is well combined with the juice.
Add Lemon Curd .
Stir again .
until everything is combined together.
Add cream cheese.(3/4 of the block)
Using a mixer, blend cream cheese into filling
Until it is nice & creamy .
Ready to fill mini tarts.
Using a teaspoon, I spooned the filling into the individual tarts
filling to the top.
These look so Yummy !
Reduce the oven temp. to 350 degrees F .
I bake the mini tarts for about 10 minutes.
The tarts are done when the filling is set.
Let cool for about 15 minutes.
(I normally stick them in the fridge to cool)
Remove from pan .
My husband is in for a treat!.
Garnish the tarts with whipped cream .
Enjoy!
