This year's Thanksgiving we were happy to celebrate the holiday
with friends since my son wasn't able to come home on Military leave.
This was the 1st year we didn't have to cook a turkey.
We were in charge of making a Thanksgiving fixins.
I decided to make all Gluten free fixins...........
(also non Dairy)
- Cornbread/gluten free stuffing with sausage & mushrooms
- Cranberry sauce
- Cranberry delight(made with gluten free rolled oats)
I started off making the gluten free corn bread
Make sure your cast iron skillet is seasoned.
I coated mine with Olive Oil.
Mix 1 pkg of Gluten free corn bread mix
melt the butter spread
& 1 1/2 cup of non dairy -I used almond milk
Add 2 eggs
& melted butter spread
Mix until batter is all well combined
Place into the iron skillet
Spread evenly
Bake cornbread
for 25 minutes in a preheated oven
at 350 degree F
Let cool and melt Earth balance spread
on top of corn bread
Once cooled cut corn bread into cubes
I'm adding Aleia's gluten free savory stuffing
I picked herbs from my garden
Sage, Rosemary & Parsley
I washed the herbs
And set them aside to dry
I place 1 sprig of rosemary
into the vegetable broth
then remove rosemary
Clean the mushrooms
Dice the mushrooms in small pieces
Dice 1/4 of an onion
I'm using Italian Turkey sausage
Remove casing from the sausage
Once remove then brown the sausage in a skillet
Saute diced onion & garlic in olive oil & butter spread
Chop the herbs ....
Add herbs to the turkey sausage
Add onion & garlic to the sausage
Saute mushrooms in olive oil & butter spread
Add garlic salt to the mushrooms
Add the turkey sausage mixture to the stuffing
Add salt & pepper
Add mushrooms to the stuffing
Stir stuffing until all is well combined while
Place stuffing into a baking dish
Cover with aluminum foil
Bake @ 350 degree F
For 45 minutes then uncover and bake for another 15 minutes
( As you can see I took a sample at the far left corner ..lol)
The cranberry sides came out Delish!
