Gluten-Free Peanut Butter and Dark Chocolate Chip Cookie


  Gluten-Free Peanut Butter and  Dark Chocolate Chip Cookie



  • 3/4 cup GLUTEN FREE  all purpose flour
  • 1 teaspoon baking soda
  • 1 cup light brown sugar
  • 1 cup all natural creamy peanut butter
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 cup dark chocolate chips 


  1. Preheat oven to 350°F. Line two rimmed baking sheets with parchment paper. In small bowl, sift together gluten free flour and baking soda. In large bowl or stand mixer, cream together light brown sugar, peanut butter, eggs, and vanilla extract  until smooth. Add dry ingredients and stir until a dough forms. Stir in chocolate chips.
  2. Scoop out or use a  rounded tablespoons onto 1 prepared baking sheet, spacing dough about 2 inches apart. Bake until cookies are set and lightly golden brown, about 10 minutes.
  3. Allow cookies to cool slightly on baking sheet for 5 minutes. Transfer to a wire rack to cool completely. Repeat with remaining dough . Store cookies in an airtight container.Makes 28 cookies.


You can also make these cookies flour-less  which is where my inspiration for these cookies  came from Emeril and his daughters(who are gluten free)Jillie and Jessie.
