Gluten/Dairy Free Sweet Honey Mini Cornbread Loafs

 Ingredients:

  •  1 box of Glutino Yankee Cornbread Mix
  • 1/2 cup of Sweet corn ( frozen or can)
  • 1 egg
  • 6 tablespoon  of nondairy butter-spread/melted (Nutivia)
  • 2 tablespoon of Raw Honey – (1 tbsp add to Mix & 1 tbsp add to melted nondairy butter-spread (shortening) to brush on top of cornbread after baking)
  • 1-1/3 cup of non-dairy milk (I’m using Silk Cashew Milk)
  • 1 tsp of Apple Cider Vinegar ( to mix in non-dairy milk for substitution for buttermilk)
****You will need a Mini loaf Pan (makes 8 mini loafs) ****

Directions:

Preheat oven  425 °F.  Spray your mini loaf pan with a non-stick spray and set aside.
I mixed all the ingredients into my Vitamix ( however you can use a hand or stand mixer or even a wire whisk in a Large mixing bowl.) I started first mixing the Apple Cider Vinegar into the Non-dairy milk and set aside.Next I place the  1/2 cup  sweet corn, honey  with 1/2 cup of the ACV and non-dairy milk mixture to cream .

Next I add the egg ,remaining ACV and non-dairy milk mixture,  and the Glutino Yankee Cornbread Mix then  blend until all is well combined. Lastly stir in the cooled melted butter-spread.  Pour the  batter into the mini loaf pan and bake 20 minutes or until a toothpick inserted comes out clean.  I then make a honey non-butter blend mixture -melted and brush each cornbread loaf right as they are Hot out of the oven. Place on a wire rack to cool .

Turkey Bone Broth / Turkey & Rice Soup



Make your own Bone Broth
 from your Thanksgiving Turkey bones...
Instructions for Bone Broth: 

  1. Place the turkey carcass ( I had a 12 lb bird) in a crock pot or a large soup pot. Cover it as much as possible with water. ...
  2. Add 2-3 carrots, 2-3 celery, 1 onion, 4-5 garlic cloves, 2 Bay Leaves & 2-3 tsp of apple cider vinegar
  3. Let it cook. For hours. ...(over night is best) I start off on High temperature in the slow cooker for 3-4 hours then switch to low temperature for remaining cooking time.
  4. Strain broth through a strainer removing all leftover bone & veggies.
  5. Strain a few more times through a strainer lined with cheese cloth.
  6.  Place bone broth in mason jars.



I then used the Bone Broth to make
Turkey & Rice soup
Makes 4 servings.
  1. Placed 4 mason jars full of bone broth( about 8 cups broth) in a Soup pot on med/low temperature.
  2. Chop 2-3 carrots, 2-3 celery,  Dice 1 onion and add it to the broth. Add 1 bay leaf.
  3. Let it cook until vegetables are tender.
  4. Add in left over Thanksgiving  turkey meat(shredded) and 1/2 cup of  frozen peas. Cook for a half hour on low heat.
  5. Cook in another pot or a rice cooker  4-5 servings of jasmine rice.
  6.  Place the steamed rice in a soup bowl and ladle the turkey soup on top .

Gluten free Turkey Pumpkin Spice Cupcakes !

Gluten free Turkey Pumpkin Spice Cupcakes

I made some gluten free pumpkin spice cupcakes

 topped with turkey pretzel treats using Glutino pretzel twist which made these

 cute & yummy

Easy Turkey Pretzel Treats

 

Ingredients

  • Glutino Gluten free Pretzel Twist
  • Rolos
  • Zachary Confections Candy Corn
  • Wilton Candy Eyes
  • Orange and Yellow Mini M&M’s

    DIRECTIONS:


    Place your pretzel twists on a baking pan lines with parchment paper .
    Place 3 candy corns on the top of pretzel to look like feathers.
    Place a Rolo in the middle of each pretzel…
    Bake for 2-3 minutes. (until the Rolo is soft)
    Press the candy eyes on top of the Rolo.
    Press on a yellow & orange M&M under the eyes to look like a beak. 

Gluten Free Pumpkin Spice Cupcakes



Ingredients


DIRECTIONS: 
Preheat Oven- 350 degrees
CREAM - Pumpkin, Avocado Oil , Eggs & Vanilla
MIX IN -  Pumpkin Pie Spice
MIX IN - Cake Mix

BAKE - 20 minutes or until a toothpick inserted comes out clean
COOL- for 30 minutes
 

FROST - top of cupcake
DECORATE-
top each cupcake with a Turkey pretzel treat.
