I'm Thankful for my Health & my family & friends!
Some Pics of The Clarks Thanksgiving!
(I was in a car accident on the day before Thanksgiving so I wasn't feeling photogenic. So Poccohanis will have to do for today. Rick & I spent the holiday alone which was nice but I was in alot of pain so we just spent the day in relaxation mode &  Rick did all the baking and made it a special day for me under all the circumstances )

Thank you to my good friend Jessica for sharing this recipe
Now I make this  every Thanksgiving...Yummy!
Rick did a good job making this recipe this year!

Preheat oven - 350 Degrees

2 Cups tart apples chopped
2 Cups raw whole cranberries
3/4 Cup White Sugar
1 Cup Quaker Oats (not instant ones)
1/2 Cup Butter melted
1/2 Cup Flour
1/2 Cup light brown sugar

Mix all of above together - bake for 50 minutes in a buttered casserole dish. Cover 1/2 of baking time then remove cover for remainder of baking time.
Serve with dinner as a sweet side dish or with ice cream as a dessert
                                                                    Cranberry Sauce

1 package (12 ounce size) fresh cranberries, picked over
1 cup sugar
2 cinnamon sticks or 1/4
teaspoon of ground cinnamon
1 cup water
Squeeze of lemon juice
(You can mix this recipe up with substituting  1/4 teaspoon freshly grated nutmeg or cloves and/or orange juice & honey & 2 tablespoons firmly packed  brown sugar )

In a saucepan combine the cranberries, sugar, cinnamon , squeeze of lemon and the water.
Simmer the mixture, covered, stirring occasionally, for 5 to 10 minutes, or until the cranberries have burst and the mixture is thickened.

Transfer the sauce to a bowl and let it cool.
Refrigerate for at least 30 minutes.
                                                 Serve with your Thanksgiving Turkey.
