Crockpot Turkey Meatball Stew

2 pounds frozen Turkey meatballs( Made in advance/left over)

1 tsp Salt


1 medium onion, finely chopped
2-3 cloves of garlic, minced

6oz can tomato paste

32oz beef broth
1 tablespoon dried parsley

1 teaspoon oregano
1-2 Bay leaves
2 cups baby carrots carrots(pealed & chopped)
1 Pkg mushrooms (sliced- stems removed)
2 cups of frozen or fresh green beans( I used frozen)

5-6 small red potatoes,cut into bite-sized pieces



Directions:





Load your crockpot first with chopped carrots, green beans, onion, potatoes, salt, pepper, onion mix, garlic, parsley, oregano, and tomato paste.

Cover with beef broth. Cooked on HIGH for 4-5 hours.


Once carrots and potatoes are fork tender then add your frozen meatballs and mushrooms on top continue cooking on LOW TEMP for another hour.
  
Serve with some crusty bread or I made some 
Gluten free Drop Biscuits for dunking !!!

Note : You can add any veggies you like  to your stew . 
Corn  & peas work really well too !
