Monday Muffin -Gluten/Dairy -Free Lemon-Blueberry

                                            Gluten/Dairy -free Lemon-Blueberry Muffins

Ingredients: 24 mini-muffins 
  • 2 cup Gluten-free muffin mix
  • 1 large egg, at room temperature
  •  ¼ cup almond milk
  • ¼ cup honey
  • ¼ cup coconut oil(melted)
  •  ¼ cup water
  • ½ teaspoon pure vanilla extract
  • ½ cup stevia sugar-Truvia
  • 1 teaspoon baking powder
  • ¼ teaspoon salt(Himalayan Crystal Salt)
  • ¼ cups fresh or frozen blueberries
  • Zest of 2 lemon
  • Coconut oil cooking spray 
  • Earth Balance Butter spread(Dairy,Gluten, & soy free)

                                                        Preheat oven to 350 degrees F  

                                   In a medium mixing bowl, whisk together the muffin mix,
                                                                baking powder,

                                                                          and salt.
                                         Mix until all is well combined. Then set aside.
                                                          In a separate mixing bowl ,
                                                        add melted Coconut oil
                                                                    and  Honey

                                 I spray the measuring cup with the non-stick coconut spray
                                        so the honey doesn't stick and comes off smoothly.

                                                       Then add the almond milk

                                                                           and 1 egg

                                                     Mix together until all is well combined.
                                                                      Zest 1 lemon
                                                            Add to the wet ingredients

                                                                   & mix together
                                                    then add the wet ingredients to the
                                                                      dry ingredients

                                                   Mix until the mixture forms a batter

                                                                 Add water
                                                              and mix again ....

                                                            Batter will be thick.

                                                                 Add the Vanilla
                                                                    to the batter
                                                         Mix until all is well combined.

                                                      Spray and mini muffin tin
                                             with non-stick Coconut oil cooking spray.
                                                    Use a small 1'' Diameter scoop 

                                                      so all the muffins are the same size
                                                                  and scoop muffin batter
                                                             into the muffin tins
                                               you will get exactly 24 mini muffins.

                                                    I forgot to add the sugar to the batter
                               so I'm adding the stevia  now to each individual muffin.

                                                       Mixing the stevia into the muffins.
                                                                       Wash & dry

                                                                  the Blueberries.

                                                           Now add about 3 blueberries
                                                                    to each muffin
                                                          then top the blueberries
                                                        with muffin mix until the
                                                         blueberries are hidden.
                                                    Repeat until all 24 muffins
                                                       are filled  with Blueberries.

                                                                For the topping .......
                                                   In a small bowl, zest 1 lemon
                                                    with 1 tablespoon of Truvia(stevia)
                                                                 until fully blended.

                                                        Top Lemon sugar mixture
                                                                    on each muffin.

                                                                 Ready to bake .........

                                                                For 20  minutes.

                                                    Take out of the oven & let cool.
                                              The muffin tops should be golden brown

& the toothpick should come out clean then you know they are done.

                                                                They look yummy !!!!
 While they are still hot .....
Top each muffin with Earth Balance butter spread.
                                                           I'm going in ....for a Bite !
                                                            Taste the tart from the lemon 
                                                     & then the sweetness of the blueberry .

                                                                   Soooo yummy
                                                                       & they are 
                                                               Gluten/Dairy free too !
                                                                 Going for another ......

                                               I set some aside for today's Breakfast ......
                                                         the remaining muffins .....
                                       You can give these as gifts or store in the freezer
                                                       for another Breakfast treat.
