Tarragon Chicken Salad With Sliced Almonds In Endive Leaves

                                                       A Healthy One Bite Appetizer
                                                          (Well maybe 2-3 bites ...lol)
                                                 These are Gluten, Dairy & Soy -free ! 
                                                        They are also sooooo Yummy!
                                                            You Can't Just Have One !
              Great to make for a Brunch or like tonight I made this for an appetizer
                                   so I can have the extras for myself as a low calorie 
                                                  packed lunch on the go for tomorrow  !
                                                                    Great recipe !!!
                                           Has all the qualities I like that fits the bill !




Ingredients



1- store-bought rotisserie chicken breast, finely shredded or chopped to yield 1 cup of meat
4-6 Belgian endive spears, leaves separated
1/2 cup sliced almonds
1-2 tablespoons of dried Tarragon (depending how strong flavor to your tasting)
1 teaspoon salt (I used fresh ground Himalayan Pink Salt)
1/4 teaspoon freshly ground black pepper
2-3 tablespoons of Earth Balance Orginal MindfulMayo® Dressing

Directions

 In a medium bowl, combine the finely shredded or chopped chicken,
 MindfulMayo & sliced almonds.
Add fresh ground pepper & salt .
Mix until all is well combined .
Spoon the filling into the endive leaves and serve.
