Creamy Broccoli Soup- Dairy-free !

                                                         Creamy Broccoli Soup
                                                                   (Dairy -Free)


Ingredients 

·        2-3 cups of Broccoli –chopped
·        2 cups of Unsweetened Almond milk
·        ½ tsp of Cornstarch (to make a slurry) to 1 tbsp of water  
·        ¼ tsp of fresh grated nutmeg (to taste)
·        Salt & Pepper
** Optional -You can substitute soy,rice or coconut milk
 

 

Directions

                                                                  Steam the Broccoli


 Drain the excess water then 

Add the Unsweetened Almond Milk to the Broccoli


                                      Bring milk to a simmer & Cook for five minutes

Add fresh grated nutmeg to the Broccoli


Make a slurry by adding cornstarch to the water
 and mix until all is well combined.
Add Slurry to the Broccoli soup 
and mix until well blended....
The soup will start to thicken ...
            To make sure my soup is the creamiest 
 I'm using a Immersion Blender 

                                           Blend & Cook until soup is thick and bubbly.
                                  Add Salt & Pepper to taste and your soup is done !!!!

To make this a Broccoli cheese soup...

                                     I added Go Veggie shredded Mexican Style Shreds....

Stir into my soup while its hot and the shreds will melt !
