Happy Cinco De Mayo!




Celebrate with a Gluten free Taco Bar fiesta !!!

Gotta love tacos  !!!
 I celebrated  Cinco De Mayo early at our last Gluten free meeting which ...
 I haven't even had a Margarita yet ....lol
I was in charge of making all the
 Mexican food items!!!
 We enjoyed some non-alcoholic, rimmed pink sugared lime peel & a lime wedge garnish cup filled with refreshing
Watermelon aqua fresca..





The Gluten free Taco Bar ...
Turkey Taco Meat 
Cilantro Lime Chicken
Corn Salsa
Pico de Gallo
Refried beans(vegan)
Chips & Salsa
Plantains 

Taco toppings: lime wedges, jalapeno, black olives, black beans, avocado, sour cream, guacamole, shredded Mexican cheese 
Here are some of the gluten free brands I used :
Old El Paso Gluten free hard taco shells 
McCormick Gluten free Taco seasoning
(Turkey Taco meat) 
Toufayan Gluten free flour tortilla wraps

Frontera Key Lime Taco Skillet Sauce


Pace Gluten free Mild & Hot Salsa
served with mission tortilla chips
Plantains
For dessert I made up some 
Gluten free Mexican Brownies 

Ingredients:

Non-stick cooking spray, for greasing pan & lined with parchment paper
2 large eggs, at room temperature
1/2 cup non-dairy butter spread(melted)
1 tablespoon ground cinnamon
1/2 teaspoon cayenne pepper

Powdered sugar mixed with cinnamon for dusting


Directions:

Preheat oven to 350ºF. Spray 7 x 11 or 8 x 8 inch pan with non-stick spray.
Lined the pan with parchment paper.
In a large bowl or mixer,
 beat eggs for 2-3 minutes. 
Gradually add dry mix. Beat to moisten.
Add non-dairy butter spread(melted) 
and stir until combined.
Add ground cinnamon & cayenne pepper.
Mix to well combined.
Pour in prepared pan and bake 25-27 minutes. Cool completely..
Dust brownies with Powdered sugar
 mixed with cinnamon.
Makes 16 brownies.
They were yummy !!!
